This month’s recipe comes from Pat Martin. Many of you know Pat from the golf course – or perhaps from Lincoln County Grill, which Paul and Pat have owned (and run!) for 31 years. These two both served in the Navy and were stationed in San Diego. They met during their time there 55 years ago and they’ve been together ever since. They have generously donated to our community many times over – including
providing meals during last year’s devastating fires!  At home they share their love with their Berne-Doodle, Snickers, and their giant Schnauzer, Heidi (pictured right).

This is Julia Chandler’s famous squash soup recipe, submitted by her daughter, Laura McCabe. Julia created this recipe many years ago, so exact amounts of ingredients can vary.
 
Laura notes, “You can add a little more broth on initial boiling because you don’t want to have it cook down too much or risk scorching. The squash provides quite a bit of liquid on its own. Because we are a family that believes in our butter-fats, we tend to be generous with the butter. Julia believes that a big reason she is going strong at the age of 97 is her consumption of a glass of buttermilk every day!”  Julia’s Squash Soup is a hearty, tasty, and fairly healthy soup!

As we move into winter proper, it brings about thoughts of delicious, body-warming soups and big pots of beans!  This month's featured recipe will give you something new to pair with those items - and even sneak in a few veggies!  Broccoli Cornbread is a favorite of part-time Alto resident Marty Cope.  An accomplished cook, Marty has an incredible book of recipes, but Broccoli Cornbread is one of her go-to sides for soup or beans.  Wink likes to see it showing up on the table, too!  It's quick to mix up and uses fan-favorite Jiffy Cornbread mix!
